Red, White, and Blueberry Cheesecake Bars

Ingredients:
  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • Powdered sugar for dusting (optional)
Instructions:
Preheat your oven to 350°F and line an 8x8-inch baking pan with parchment paper. In a small bowl, combine the graham cracker crumbs with the melted butter, then press the mixture firmly into the bottom of the prepared pan to form the crust. In a separate bowl, beat the cream cheese and sugar until smooth, then add the egg and vanilla extract, mixing until creamy and well blended. Pour the cream cheese mixture over the crust, spreading it evenly. Gently scatter the blueberries and raspberries across the top, pressing them in slightly. Bake for 25–30 minutes, or until the edges are lightly golden and the center is set. Allow the bars to cool completely in the pan on a wire rack. Once cooled, lift them out using the parchment paper and slice into squares. Dust with powdered sugar if desired and enjoy a festive treat that’s perfect for any Independence Day gathering!

Sip & Savor: Wine Delights

Ron Yates 2022 Blanco BDX
This white blend of Sauvignon Blanc and Semillon offers a unique Texas twist. Aromas of Bartlett pear and lemongrass lead to flavors of lemon tart and ripe nectarine, creating a balanced profile that's crisp yet textured. Minimal oak and stainless steel aging preserve the bright fruit character, while Semillon adds complexity and a silky mouthfeel. Pair it with lemon garlic butter chicken for its citrus notes or blackened shrimp scampi for its crisp acidity that complements the dish's richness and seafood sweetness.
